Cantucci Toscani

2 cups – 500g all-purpose flour
2 cups – 400g granulated sugar
2 cups – 200g almonds
2 medium eggs
3 yolks
½ cup – 100g unsalted butter
1 tbsp – 25g honey
2 tbsp – 16g baking powder
zest of 1 orange

In a large bowl, combine the flour with baking powder and mix with a whisk. Add the sugar, the eggs and the yolks, the butter at room temperature, whisk and transfer the mixture to a pastry board. Add the almonds, honey, orange peel and knead the dough to obtain a homogeneous mixture.
Form the slices of about 2 cm in diameter with the fingers, place them on a baking sheet lined with parchment paper, and brush the slices with egg.
Bake for 25 min at 180 ° C – 356 ° F.
Once out of the oven and still hot, cut the biscuits 1.5 cm thick at an angle. Put the biscuits back in the pan and bake again for 6-7 min at 180 ° C – 356 ° F.
Serve with vinsanto or a sweet liqueur wine.
