Coconut and ThreeChochochips
½ cup – 100g unsalted butter
1/3 cup – 60g granulated sugar
2 ½ tbsp – 30g icing sugar
1 medium egg
1 tbsp – 8g baking powder
1 cup – 140g all-purpose flour
¾ cup – 125g chocolate chips (dark, milk, white)
¾ cup – 120g shredded coconut
a pinch of salt
In a large bowl, add the butter at room temperature, the two sugars already mixed together, and work with the electric whisk until the dough is mounted. Add the egg, a pinch of salt and the flour already incorporated in the baking powder. Blend again for a few minutes.
At this point add the chocolate drops, the coconut rapè, stirring with a spatula or a wooden spoon.
With the dough, form small balls to press them upwards to obtain discs with a diameter of about 14cm that will be placed at a certain distance on a baking sheet supplied with baking paper. Bake for 15-18 minutes at 375 ° F – 190 ° C until obtaining a nice browning on the surface.
From this dough you will get 10 cookies.
