Gluten Free Delicious Cake

3/8 cup – 35g almond flakes
2 cups – 200g grounded almonds
5 medium eggs
2 cups – 200g granulated sugar
5 tsp – 12g cinnamon
1 tbsp – 7g cocoa powder
1 tbsp – 8g baking powder

In a large bowl, add the sugar to the yolks, and whisk quickly to obtain a light and homogenous cream. Combine grounded almonds and baking powder, and work the mixture with the whisk. Separately, whisk the egg whites until stiff, adding half to the first mixture, stirring until smooth. Still stirring, add cinnamon and cocoa powder. Combine the remaining whipped egg white, stirring gently with a spatula.
Put the mixture in a greased with butter and cornstarch baking pan, add almond flakes to the surface and bake in preheated oven at 356°F – 180 degrees for 45 minutes.
