Mozzarella in Carrozza

2 buffalo mozzarella
16 toast slices
all-purpose flour
2 medium eggs
seed or sunflower oil to deep fry

Cut the buffalo mozzarella into slices (about 4 slices of mozzarella), and drain it on paper towel to remove the excess milk.

Remove the edges of the bread and obtain 16 slices that are as similar as possible to a square.

Place a slice of mozzarella on a slice of toast, and cover it with another slice, as if to form a sandwich. Cut the slice in half, obtaining two equal triangles, and pass them first in the flour, the egg and finally the breadcrumbs.

Heat the seed or sunflower oil, until it reaches a temperature of about 302 ° F – 150 ° C (in this way the cooked mozzarella will be stringy).

Deep fry for a few minutes until golden brown, and serve with a sauce to taste.
