Fried Zucchini Blossoms

Fried Zucchini Flowers – Fiori di Zucca fritti

12 zucchini flowers
1/2 cup – 125g ricotta cheese
mozzarella cheese
pecorino cheese to taste
black pepper to taste
salt to taste

for the batter

7/8 cup – 100g all-purpose flour
1 tbsp – 15g EVO Oil
juice of 1 lemon
5oz – 150g cold beer

sunflower oil to deep fry

Clean the zucchini flowers well and dry if necessary.

Put the ricotta in a small bowl and add a pinch of grated pecorino, salt and pepper. Mix and fill each blossom with the cheese.

As an alternative, fill the flowers with a slice of mozzarella and an anchovy.

for the batter

In a bowl pour the flour, add a tablespoon of extra virgin olive oil, the juice of 1 lemon and the very cold beer. Mix by hand with a whisk and obtain a smooth dough.

Dip each flower in the batter and fry in boiling sunflower oil.
