Pasta with Peppers, Mozzarella and Carasau bread
4 tbsp – 60g evoo
2 tsp – 1 g parsley
3/8 cup – 40g parmesan cheese
Boil the water to cook the pasta. Roast two red peppers in the oven, cover with the transparent film, wait for them to cool, peel them and cut into strips. The transparent film helps to peel them more easily.
In a pan, add the oil, the thinly sliced shallot, two cloves of garlic and the peppers, which should be fried for a few minutes. Salt and pepper.
In the meantime, put the pasta to cook, taking care to salt the cooking water.
At this point, put the fried peppers, parsley and parmesan in the blender. Start the blender and add a little oil to taste, to obtain a smooth cream.
Add the pasta to the sauce, stir well to mix everything, and add a few ladle of water from the pasta if the sauce is too dry. Serve with pieces of fresh mozzarella and carasau bread previously heated in the oven.
Complete the dish with a turn of oil and a leaf of parsley.
